No-Bake Mixed Berry Cheesecake Tart Ingredients

- Digestive biscuits/graham crackers: Digestive biscuits are popularly used for no-bake dessert crusts in Europe and England. Whereas graham crackers are used in the United States.
- Butter: Opt for unsalted butter for the no-bake mixed berry cheesecake tart crust. Once the butter has melted, let it cool before mixing it with the blitzed biscuits.
- Cream cheese: Ensure that the cream cheese is at room temperature when making the filling. Opt for full-fat cream cheese.
- Heavy cream/double cream: Use full-fat heavy cream and make sure it is cold to achieve stiff-to-medium peaks when mixing.
Tips and Substitutions
- Crust: Make sure the biscuit crust is finely and evenly blended. This will help create a smooth, even base that is easy to press into the tart tin. Use the back of a spoon or the base of a glass to press the crust down firmly. If it isn't packed tightly enough, the tart may crumble when you slice and serve it.
- Cream Cheese: You can substitute the cream cheese with mascarpone if you prefer a richer, creamier texture. Use the same quantity of mascarpone as the recipe calls for cream cheese.
- Mixed Berry Jam/Sauce: If using a homemade jam, let it to cool completely before topping the no-bake mixed berry cheesecake tart. As an alternative, you can use strawberry, raspberry, or blueberry jam.
- Add-ins: Spread a thin layer of the berry sauce over the crust before adding the cream cheese filling, then finish with the remaining mixed berry topping. This will give the no-bake mixed berry cheesecake tart an extra burst of berry flavor.
How to make No-Bake Mixed Berry Cheesecake Tart

Step 1: Add the digestive biscuits (or graham crackers) to a food processor.
Step 2: Blitz until they form fine, even crumbs.
Step 3: Transfer the biscuit crumbs to a bowl, pour the melted butter over them, and mix until all the crumbs are evenly coated.
Step 4: Tip the mixture into a tart tin.

Step 5: Press it down firmly over the base and up the sides to form an even crust. Use the back of a spoon or the bottom of a glass to press the crumbs firmly. Chill the crust in the refrigerator while you prepare the filling.
Step 6: In a large bowl, whisk together the cream cheese, sugar, and vanilla until smooth and creamy.
Step 7: In a separate bowl, add double (heavy) cream and whisk for 2-3 minutes or until medium peaks form.
Step 8: Gently fold the whipped cream into the cream cheese mixture until everything is evenly combined.

Step 9: Spoon the cheesecake filling into the chilled tart crust.
Step 10: Smooth the surface with an offset spatula or the back of a spoon.
Step 11: Stir the mixed berry jam until smooth. If it's too thick, gently warm it over a low heat, then allow it to cool completely. Transfer the jam to a piping bag and pipe diagonal lines across the top of the cheesecake filling.
Step 12: Use a skewer or the tip of a knife to gently drag through the lines in alternating directions to create a feathered pattern. Carefully cover the tart without touching the surface and chill for at least 6 hours, or preferably overnight, until fully set.
Step 13: Once the no-bake mixed berry cheesecake tart has set, gently remove it from the tin and transfer it to a serving plate. Fill the center of the tart with a generous mixture of fresh mixed berries. Slice and serve this delicious summery no-bake mixed berry cheesecake tart for a stunning dessert.
