We’ve added Bulgur wheat, olives, tomatoes, feta cheese, cucumbers, red onions (or red cabbage) and sesame seeds to our bowl. You can also add chickpeas for extra protein.
This Mediterranean salad is great because it is very filling. It can be eaten alone, as a side or paired with fish for dinner.
How To Make An Easy Mediterranean Diet Recipe
Add 1 cup of bulgur wheat and 2 cups of water to a saucepan. Bring to a boil and cook on a low heat for 10-15 minutes.
Add the bulgur wheat to a large bowl and leave to cool for 20-30 minutes.
Meanwhile, chop tomatoes, cucumbers, onions, olives, feta and set aside.
Once the bulgur wheat has cooled add all of the ingredients to a large bowl.
Finally, season the salad with, salt to taste, pepper to taste, a few drops of olive oil, 1/2 tsp of garlic powder seasoning, 1 tsp of tzatziki, 2-3 tsp of lemon juice, 1-2 tsp of balsamic vinegar (taste and adjust the seasoning if necessary), mix and serve.
Storage
This salad is best eaten fresh. However, it can be refrigerated for up to 1 day.
