How to Make Thick Fluffy Pancake Recipe
- Combine all of the dry ingredients ( 390 g of flour, 2 tbsp of baking powder, 1.5 tsp of salt, and 7-9 tablespoon of sugar) in a bowl, create a well in the middle, and set aside.
- Combine the wet ingredients ( 590 ml of milk, 2 large eggs, 8 tablespoons of ¾ cup of unsalted butter and 2 tsp of vanilla extract) into a separate bowl and whisk well.
- Create a well in the middle of the dry ingredients, then pour in the wet ingredients. Use a fork to slowly stir in the middle of the well and gradually draw in the flour from the sides. Once all of the ingredients are combined evenly stop mixing (avoid over mixing).
- Heat 1 teaspoon of unsalted butter on a low/medium heat stove. Use a ladle to pour the batter into the pan and leave to cook for 1-2 minutes (when bubbles appear on the pancake's surface), then flip and leave for another 2 minutes. Repeat this step for the rest of the batter. When it comes to making the perfect pancakes timing is very important and it is crucial that you stay with the pancakes because there is a big difference between leaving them to cook for 1 minute compared to 3 minutes!
- Finally, get ready to plate up your pancakes and create the perfect stack! Get creative and use your favorite toppings. I went for the classic topping, chocolate sauce, and strawberries, and dusted some caster sugar on top.
