Ingredients
- 2 eggs
- ½ a handful of cherry tomatoes
- ¼ onion
- ½ a handful of spinach
- ½ a handful of grated cheese
- Salt to taste
- Pepper to taste
- A splash of olive oil
Instructions
- Break two eggs into a bowl and season with salt and pepper. Add cherry tomatoes, mixed leaves, onions and mix well.
- Heat a splash of rapeseed oil in a pan and pour the egg mixture into the pan. As the egg begins to set swirl the pan around so that the omelette covers the surface of the pan. Whilst still slightly runny add the cheese to the center and fold omelette in half.
- Leave to cook for another 30 seconds and slide the omelette onto a plate.
