How to Make Our Healthy Naked Chicken Burrito Bowl
1. Take 1 cup of white rice and rinse it through. Fill a medium saucepan with 2 cups of water, then add the rice. Boil the water, and then cook for 12-15 minutes, making sure to cover the pan with a lid.
2. While the rice is cooking, add some oil to a pan and start to heat it. Add 1-2 chopped chicken fillets to the pan, seasoning with your favorite herbs (we like cumin, curry powder, paprika, and salt). Pan fry the chicken for 10 minutes or until it is cooked through.
3. Once the rice is done, add it to a bowl, along with the chicken, ½ can of black beans, a chopped avocado, chopped tomatoes, and ½ cup of sweetcorn. You are free to add some of your other favorite Southwestern-inspired vegetables as well.
4. Split up between 2-3 servings, and enjoy!
Serving Suggestions
Many official dietary guidelines around the world recommend no more than 3 cups of legumes like black beans per week, so you might want to use this dish as a great way to practice your portions. We recommend a ½ cup of beans or no more than 1 cup of this dish per meal!
