I love asparagus and am always looking for different ways to enjoy it. I usually boil or pan-fry it, but on this occasion, I decided to roast it and pair it with mozzarella cheese, and I was not disappointed!
Asparagus is known for its strong taste with bitter undertones, which people either love or hate. However, the baked mozzarella cheese adds a salty, cheesy flavor that perfectly complements the asparagus.

Tips and Substitutions
Select asparagus that is vibrant green and firm. Avoid any asparagus with scars, bruises, or discoloration. The skin should be vibrant and not dried out.
How to Make Roasted Cheesy Garlic Asparagus
- First, wash the asparagus and leave them to dry, or pat them dry using a paper towel.
- Preheat 220C/428F/Gas 6. Then, chop off the ends of the asparagus and add them to an oven tray.
- Add a splash of vegetable oil to a small bowl, add salt to taste, pepper to taste, a pinch of parsley and 2 cloves of chopped garlic. Stir the ingredients together.
- Pour the mixture on to the asparagus and mix. Then, add 180-250g of chopped mozzarella pieces along the center of the asparagus.
- Bake the cheesy garlic asparagus for 12-15 minutes or until done. Remove from the oven and serve with Easy Cheesy Scalloped Potatoes and Oven-Baked Salmon with Lemon and Pepper.

- 1 bundle of asparagus
- Salt to taste
- Pepper to taste
- A pinch of parsley
- 2 cloves of chopped garlic
- 180-250 g of mozzarella chopped
- Vegetable oil
