I love asparagus and I am always looking for different ways to enjoy them. I usually boil or pan fry them but, on this occasion, I decided to roast them and pair them with mozzarella cheese and I was not disappointed!
Asparagus is known for having a strong taste with bitter undertones which people either love or hate. However, the baked mozzarella cheese adds a salty cheesy flavour which compliments the asparagus perfectly.

How to Select the Best Asparagus
Select asparagus that is vibrant green and firm. Avoid any asparagus with scars, bruises, or discoloration. The skin should be vibrant and not dried out.
How to Make Roasted Cheesy Garlic Asparagus
- First you will need to wash the asparagus and leave them to dry or pat them dry using a paper towel.
- Preheat 220C/428F/Gas 6. Then, chop off the ends of the asparagus and add them to an oven tray.
- Add a splash of vegetable oil to a small bowl, add salt to taste, pepper to taste, a pinch of parsley and 2 cloves of chopped garlic. Stir the ingredients together.
- Pour the mixture on to the asparagus and mix. Then, add 180-250g of chopped mozzarella pieces along the center of the asparagus.
- Bake the cheesy garlic asparagus for 12-15 minutes or until done. Remove from the oven and serve as desired.
