Suya is a popular street food eaten in West Africa. It is a spicy meat skewer typically made with beef and served with tomatoes and onions.
Suya spice includes ground peanuts, salt, smoked paprika, ground ginger, garlic powder, onion powder, chicken bouillon powder and cayenne pepper.

- Chicken seasoning: Use your favorite brand of chicken seasoning.
- Vegetable or sunflower oil

- Chicken pieces: I used chicken legs in this recipe. But you can use any chicken piece of your choice such as drumsticks or kebabs. The cooking times will differ when you use different chicken pieces.
- Pepper: For more spice, add paprika or cayenne pepper.
- Flavor: For optimal flavor marinate the chicken overnight before cooking.
How to Make Spicy Grilled Suya Chicken
- Start by patting the chicken legs dry using a paper towel.
- Then, add chicken legs to a bowl. Add a splash of oil, season with salt to taste and chicken seasoning. Leave to marinate for at least 30 minutes.
- Preheat oven to 200C/180C Fan/400F/Gas 6.
- Then, add suya spice and vegetable oil to a small bowl and stir.
- Finally, brush the chicken legs with the suya spice mixture and bake for 30 minutes. Baste the chicken legs with the suya spice mix and turn the chicken every 10 minutes while it grills. Once it is done, serve and enjoy!
