This spicy grilled suya chicken is the perfect succulent side. Serve with jollof rice, fried rice or vegetables and watch it disappear in seconds!
What is Suya?
Suya is a popular street food eaten in West Africa. It is a spicy meat skewer typically made with beef and served with tomatoes and onions.
Suya spice includes ground peanuts, salt, smoked paprika, ground ginger, garlic powder, onion powder, chicken bouillon powder and cayenne pepper.
What Chicken Piece Should I Use?
I used chicken legs in this recipe. But, you can use any chicken piece of your choice. Here are a few examples:
- suya chicken breast
- whole chicken suya
- suya chicken drumsticks
- suya chicken wings
If you are using any of the pieces listed above the preparation will remain the same. You will need to marinate the chicken with suya spice for at least 30 minutes.
However, each chicken pieces will be grilled for different amount of times. For example, a whole chicken will need to be grilled for 1 hour and 30 minutes. While chicken wings should be grilled for 30 minutes.
How to Make Spicy Grilled Suya Chicken
- Grab 5 large chicken legs and pat them dry.
- Then, add chicken legs to a bowl. Add a splash of oil, season with salt to taste and ½ a tsp of chicken seasoning. Leave to marinate for at least 30 minutes.
- Preheat oven to 200C/180C Fan/400F/Gas 6.
- Then, add 4 tbsp of suya spice and 2 tbsp of vegetable oil to a small bowl and stir.
- Finally, brush the chicken legs with the suya spice mixture and bake for 30 minutes. Baste chicken legs with suya spice mix and turn the chicken every 10 minutes while it grills. Once it is done serve and enjoy!
What to Serve with Spicy Grilled Suya Chicken?
I served these spicy grilled suya chicken legs with bulgur jollof and plantain. You can also serve it with:
- Jollof rice
- Fried Rice
- Onions and tomatoes
- Jollof Spaghetti
Storage
Refrigerate suya chicken for 3-4 days in an airtight container.
