How to Make Creamy Garlic Pesto Pasta
- Start by adding water and a pinch of salt to a saucepan and bring to a boil. Then add pasta and cook for 8-10 minutes.
2. Next, add basil, coriander, parsley, spinach, garlic cloves, lemon juice, olive oil, salt, and pepper to taste to a food processor and blend for two minutes.
3. Taste and adjust seasoning if necessary. Add peas and blitz again until smooth.
4. Once you are happy with the taste and consistency, set aside until the pasta is ready. Reserve one cup of pasta water and drain the rest when the pasta has cooked. Then add the pasta and pesto to a bowl and mix well.
