How to Make Creamy Avocado Pasta Salad
- Add spaghetti to a saucepan of boiling water and add a pinch of salt. Leave to cook for 10-15 minutes on a low/medium heat.
- Peel avocados, add them to a food processor, add garlic cloves, peas, lemon juice, salt, pepper and blitz for a few minutes. Gradually add olive oil until the mixture becomes smooth.
- Once the spaghetti is ready drain out any excess water and add the spaghetti to a large bowl. Add the avocado mix to the bowl, mix well and adjust seasoning if necessary.
Alternatives
The avocado sauce is very adaptable so you can add any of your favorite herbs and seasoning to suit your taste.
