Egg Breakfast Wrap
Equipment
- 1 Frying pan
Ingredients
- 2 large eggs
- ¼ of a red onion
- ½ chopped avocado
- ½ sliced tomato
- a handful of spinach
- ½ a handful of rocket
- handful of your favourite shredded cheese
- Salt to taste
- Pepper to taste
- Sriracha optional
- A splash of olive oil
Instructions
- In a medium mixing bowl, crack open 2 large eggs. Add ¼ of a red onion, sliced, to the bowl. Then, add a pinch of salt and pepper to your liking. Beat the ingredients until they are thoroughly combined.
- Heat up some olive oil in a frying pan. Pour the egg mixture and cook the eggs for 3-5 minutes per side.
- Quickly remove the omelette from heat and add it flat onto a plate. Add your scrumptious fillings, which for us includes: ½ chopped avocado, ½ sliced tomato, a handful of spinach, ½ a handful of rocket, and 1 handful of your favourite shredded cheese).
- Roll up the omelette with all of the ingredients inside, like a burrito!
- Optional: Drizzle sriracha sauce on top for a dash of spice and flavour! You can also replace it with your preferred condiment, like ketchup.
- Cut it in half and enjoy!
