How to Make Avocado Toast with Scrambled Eggs
First, crack the eggs into a bowl. Add the milk, salt and pepper and whisk together.
Melt the butter in a pan on medium/low heat and add the whisked eggs. Allow the eggs to set before removing them from the heat.
In a separate clean bowl, season the avocados with some salt and pepper and set aside.

Fluffy Scrambled Eggs on Avocado Toast
Ingredients
- 1/2 Avocado
- 1 slice of bread
- 1/2 handful grated cheese (optional)
- 1-2 tbsp unsalted butter
- 1 tsp milk
- 2 eggs
- Salt to taste
- Pepper to taste
- Parsley to garnish
Instructions
- Crack two eggs into a bowl. Add 1 tsp of milk, a pinch of salt, pepper and beat well for 1 minute. Heat unsalted butter in a pan on a low/medium heat stove. Once the butter has melted pour the egg mixture in and stir until the eggs begin to set (1-3 minutes). When you are happy set aside.
- Peel avocado, remove the seed and add it to a bowl. Add a pinch of salt, pepper and use a fork to mash it until smooth. Set aside.
- Toast a slice of bread and set aside for later.
- Grate a handful of cheese and set aside. (optional)
- Spread the mashed avocado on to the toast. Then, place the scrambled eggs on top. Finally sprinkle some cheese on top of the scrambled eggs and garnish with parsley.
