Ingredients

See the recipe card for full information on ingredients and quantities.
- Prawns: Use fresh prawns, peeling and cleaning them before cooking. If you are using frozen shrimp, defrost completely before cooking.
- Soy sauce: You will need normal and dark soy sauce for this recipe.
- Baking soda: Ensure that the baking soda has not expired.
- Vegetable or sunflower oil: Use any flavorless oil to cook the shrimp.
- Mixed vegetables: I use frozen vegetables for this recipe. The mixture includes peas, carrots and sweetcorn.
- Garlic: This recipe calls for fresh garlic for delicious flavor. If you do not have fresh garlic, you can use garlic powder or garlic paste instead.
- Cooked white rice: For the best results, use leftover cooked white rice that has been refrigerated for 2-3 days. Chilling the rice helps to dry it out slightly, preventing it from becoming mushy when cooked with the other ingredients. This ensures a firmer texture, allowing the grains to absorb flavors while remaining distinct and fluffy. Freshly cooked rice tends to be too soft and sticky, making it less ideal for this dish.
- White pepper: You can adjust the amount of white pepper to suit your taste.
Tips and Substitutions
- Vegetables: For this recipe, feel free to use any vegetable of your choice. You can use broccoli, cabbage, or even red peppers.
- Add-ins: Add your favorite ingredients to this dish, such as mushrooms, beef, pork, spring onions, and more!
