How to Make a Ground Beef Burrito
This is a great quick and easy meal if you've got some leftovers in the fridge. I am a big burrito fan and eat them whenever I have the chance so learning how to make them was definitely a plus for me!
1. Heat some sunflower oil (or a healthy oil of your choice) in a pan. Add chopped onion and crushed garlic clove to the heated oil and cook until soft and golden-brown. Then, add minced beef with salt and pepper and cook until the meat is browned.
2. Then, add tomato puree to the cooked beef and stir. Sweeten with a drop of lemon juice, salt to taste, pepper to taste and a pinch of oregano. Cook on low heat for about 10-12 minutes. You can also add any other seasoning of your choice. Once it is ready, set aside.
3. If you have precooked plain white rice, squeeze in lemon to taste, add chopped coriander, salt, and pepper to taste, and stir. Alternatively, you can cook the rice from scratch and add these ingredients as it cooks.
4. Next, peel the avocado and add a few drops of olive oil, salt, and pepper to taste. Then, use a fork to mash until smooth and set aside. Heat up beans and set aside.
5. Then, warm the tortilla wraps in the microwave for 30 seconds.
7. Grab a tortilla wrap and add the minced meat sauce. Add the beans, rice, chopped tomatoes, greens, grated cheese, guacamole, and Greek yogurt. Tuck in the sides and wrap it up! Repeat the steps for the other wrap.

Ground Beef Burrito
Equipment

Ingredients
- 1 avocado
- 50 g cheese
- 200 g cooked/tinned beans
- 150 g lemon and coriander rice Pre-cooked
- 150 g minced beef sauce
- 3 tablespoon Greek yoghurt
- ½ Lemon
- 2 large leaves Seasonal Greens/lettuce/any greens
- 2 tomatoes
- 2 tortilla
- Parsley to garnish
Instructions
- Heat up minced beef sauce and set aside see notes for recipe.
- If you have precooked plain white rice squeeze in lemon to taste, add some chopped coriander, salt and pepper to taste and stir. Alternatively, you can cook the rice from scratch and add these ingredients as the rice cooks.
- Peel avocado, add a few drops of olive oil, salt and pepper to taste. Then use a fork to mash until smooth and set aside. Heat up beans and set aside.
- Warm the tortilla wraps in the microwave for 30 seconds.
- Grab 1 tortilla wrap and add the minced meat sauce, then add beans, 1-3 tablespoon of rice, ¼ handful of chopped tomatoes, ¼ handful of greens, ½ a handful of grated cheese, 1-2 tablespoon of guacamole, 1 tablespoon of Greek yoghurt, tuck in the sides and wrap it up! Repeat steps for the second wrap.
