This salad was fairly easy to make with an electric chopper. It turned out really really good. Crunchy and vibrantly colored. I will definitely make it again.

      1. Hi Linda, Bell peppers are naturally sweet, so there’s no need to worry about them being spicy.

  2. It sounds great for the upcoming Mexican food potluck at my church, but I would have to make it the night before. Is that possible or would it be soggy by the next day at Noon? Has anyone stored it in the frig overnight?

    1. Hi Linda, You can refrigerate it overnight, but you may notice a little liquid at the bottom and slight oxidation from the avocado. For the freshest texture and flavor, it’s best enjoyed the same day.
