Ingredients
See the recipe card for full information on ingredients and quantities.
- Cauliflower: Use one medium unbruised cauliflower and remove the stem and leaves. You may also enjoy these cauliflower recipes: Spicy Roasted Cauliflower Florets and Turmeric Whole Roasted Cauliflower.
- Cajun seasoning: This flavorful seasoning includes garlic powder, onion powder, salt, paprika, and thyme (the ingredients vary depending on the brand). Use a low-sodium Cajun seasoning to control the salt level in the dish.
- Collard greens: Collard greens can be cooked or served raw. Both have many health benefits. I used collard greens in these low-carb Cajun cauliflower wraps because they are firm and hold the ingredients together. Other greens tend to fall apart and can cause things to get messy fast!
Tips and Substitutions
- Add-ins: You can customize this recipe based on your needs and dietary restrictions. Add almost anything to a collard green wrap or make easy switches.
- Filling: For a vegan option, fill it with your favorite veggies, such as carrots, tomatoes, broccoli, celery, and tofu.
- Protein: To increase the protein in a vegetarian option, add eggs, cheese, tempeh, etc.
