How to Make Raffaello Tiramisu

Step 1: Pour heavy cream into a bowl.
Step 2: Whisk for 3-5 minutes or until stiff peaks form
Step 3: In a separate bowl, add mascarpone, almond extract, sugar and whisk for one minute. Next, gently fold the whipped cream into the mascarpone.
Step 4: Then, pour ยผ cup of coconut cream into the filling.

Step 5: Fold until combined.
Step 6: Pour ยพ cup of coconut milk into a bowl and dip the ladyfinger in for about ten seconds.
Step 7: Place the ladyfingers in a dish. Repeat the step with the remaining ladyfingers to fully cover the dish.
Step 8: Scoop half of the coconut mascarpone on top.

Step 9: Smooth evenly as shown in image 9.
Step 10: Then, add another layer of coconut-soaked ladyfingers.
Step 11: Add the remaining coconut mascarpone filling
Step 12: Smooth until even, cover the tiramisu with plastic wrap and let the Raffaello tiramisu chill for at least 6 hours or overnight.ย

Step 13: Ten minutes before removing the Raffaello Tiramisu, pour heavy cream into a bowl. Whisk until stiff peaks form. Then, add coconut milk and melted white chocolate.
Step 14: Whisk again until fully combined. Then, add the cream to a piping bag with a star nozzle.
Step 15: Pipe the white chocolate whipped cream on top of the Raffaello tiramisu.
Step 16: Top the Raffaello tiramisu with coconut flakes. Then, decorate with Raffaello and strawberries.

Raffaello Tiramisu
Equipment
- 9" Oval or square dish
- Hand-held electric whisk
- mixing bowl
Ingredients
- 1 ยผ cup of Heavy cream
- 16 or 450g of Mascarpone cheese
- ยผ teaspoon of Almond extract
- ยผ cup of Coconut milk or coconut cream (melted)
- 260 g of ladyfingers or enough to fill two layers of the dish
- โ cup of coconut milk
Topping
- 1 cup of heavy cream
- 30 g of white chocolate melted
- 2 tablespoons of coconut milk
- 1 cup of Coconut flakes
- 1 cup of Raffaello
- ยฝ cup of Strawberries
Instructions
- Whisk heavy cream in a bowl for 3-5 minutes or until stiff peaks form. Set aside.
- Then, in a separate bowl, add mascarpone, almond extract, sugar and whisk for one minute or until evenly combined.
- Next, gently fold the whipped cream into the mascarpone. Then, pour ยผ cup of coconut cream into the filling and fold or whisk on low speed until combined.
- Pour ยพ cup of coconut milk into a bowl and dip one ladyfinger in for about ten seconds. Then, place the ladyfinger at the bottom of the dish. Repeat this step for the remaining ladyfingers until the bottom of the dish is fully covered.
- Next, scoop half of the coconut mascarpone filling on top and smooth.
- Then, add another layer of coconut soaked ladyfingers.
- Add the remaining coconut mascarpone filling and smooth until even. Then, cover with a plastic wrap and let the tiramisu chill for atleast 6 hours or overnight.
Topping
- Ten minutes before removing the Raffaello Tiramisu, pour heavy cream into a bowl. Whisk until stiff peaks form. Then, add coconut milk and melted white chocolate. Whisk again until fully combined. Then, add the cream to a piping bag with a star nozzle.
- Remove the coconut raffaello tiramisu from the fridge.
- Then, pipe the white chocolate whipped cream on top to cover the Raffaello tiramisu. Finally, top with coconut flakes, raffaello and strawberries.
